Serving my family wholesome, healthy food is really important to me, which is one reason I love Zaycon Fresh chicken. I was trying to think of something delicious and nutritious to make using Zaycon chicken and Chicken Soup for the Soul chicken broth, something that is light enough that it can be enjoyed in the coming warmer months. I decided to make a Chicken and Lentil Bowl with Collard Greens (of course I had to add a little slice of the South.) There is always this feeling of satisfaction when you gather your family around the table and serve them a delicious meal they enjoy. All of my boys loved this dish and ate it with smiles on their faces and happy bellies.
Ingredients
- 2 Tablespoons olive oil
- 1 Zaycon Fresh chicken breast, cubed
- 1 cup yellow onion, diced
- 2 cloves garlic, minced
- 1 lb lentils, rinsed
- 1 container (4 cups) Chicken Soup for the Soul Chicken Broth
- 1 15-oz can crushed tomatoes
- 2 bay leaves
- 2 sprigs of thyme
- 2 teaspoons kosher salt
- 1/2 teaspoon ground coriander
- 1/2 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/8 teaspoon ground ginger
- 1 dash freshly ground black pepper
- 1 medium carrot, finely chopped
- 2 stalks celery, diced
- 1/4 cup red cabbage, diced
- 2 cups (about half a head) collard greens, chopped (prepare as you would kale)
- 1 teaspoon red wine vinegar
Directions
1. In a large pot, heat up olive oil and add chicken. Saute about 3 minutes.
2. Stir in onion and garlic and saute an additional 3 minutes.
3. Add in lentils and chicken broth then stir.
4. Mix in the tomatoes, bay leaves, thyme, and spices. I pre-measure and pre-mix the spices to save one step during the cooking process. Bring this mixture to a boil then reduce heat to simmer for 10 minutes.
5. After 10 minutes, stir in the carrots, celery, and red cabbage and cook an additional 15 minutes, stirring occasionally.
6. After 15 minutes, add the collard greens and continue cooking 10 more minutes.
7. When your food is finished cooking, stir in the vinegar and remove the bay leaves and thyme.
Bonus tip: Pre-measure and pre-prepare everything you can before you start cooking. Sometimes you will have distractions you need to take care of right away (like kids climbing onto the table) and you will need to step away for a moment and you may not have time to finish chopping those veggies before the next step.
