Chicken and Lentil Soup with Collard Greens

A twist on lentil soup, this delicious dish is fresh and colorful with a savory taste and a hint of spice. It makes a great entree or appetizer.
Ingredients
  • 2 Tablespoons olive oil
  • 1 chicken breast, cubed
  • 1 cup yellow onion, diced
  • 2 cloves garlic, minced
  • 1 lb lentils, rinsed
  • 1 container (4 cups) chicken broth
  • 1 15-oz can crushed tomatoes
  • 2 bay leaves
  • 2 sprigs of thyme
  • 2 teaspoons kosher salt
  • ½ teaspoon ground coriander
  • ½ teaspoon cumin
  • ½ teaspoon turmeric
  • ⅛ teaspoon ground ginger
  • 1 dash freshly ground black pepper
  • 1 medium carrot, finely chopped
  • 2 stalks celery, diced
  • ¼ cup red cabbage, diced
  • 2 cups (about half a head) collard greens, chopped
  • 1 teaspoon red wine vinegar
Instructions
  1. In a large pot, heat up olive oil and add chicken. Saute about 3 minutes.
  2. Stir in onion and garlic and saute an additional 3 minutes.
  3. Add in lentils and chicken broth then stir.
  4. Mix in the tomatoes, bay leaves, thyme, and spices. I pre-measure and pre-mix the spices to save one step during the cooking process. Bring this mixture to a boil then reduce heat to simmer for 10 minutes.
  5. After 10 minutes, stir in the carrots, celery, and red cabbage and cook an additional 15 minutes, stirring occasionally.
  6. After 15 minutes, add the collard greens and continue cooking 10 more minutes.
  7. When your food is finished cooking, stir in the vinegar and remove the bay leaves and thyme.
  8. Serve warm and enjoy!
