Blueberry and lemon is a classic combination. I love the sweetness of the blueberries combined with a punch of tart from the lemon. The duo pairs perfectly in this No-Churn Lemon Blueberry Frozen Yogurt with Wafers recipe.

Don’t you just love the tart flavor of fresh lemon? I know I do. The flavor definitely comes through in Loacker Lemon Wafers, and they taste simply delicious with this No-Churn Lemon Blueberry Frozen Yogurt.

No-Churn Lemon Blueberry Frozen Yogurt with Lemon Wafers

You don’t need to churn this frozen yogurt, you simply need a food processor. It’s deliciously smooth and creamy. I’ll share a few different ways I served this tasty dessert with crisp Lemon Wafers.

Ingredients:

  • 1 teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 teaspoons granulated sugar
  • 1/4 cup plain yogurt
  • 1 1/2 cups frozen blueberries (kept frozen)
  • Lemon Peel (for serving)
  • Lemon Wafers (for serving)
  • White Chocolate (for option 3)

Option 1: Frozen Yogurt

In a food processor, combine the lemon juice, vanilla, sugar, yogurt, and blueberries.

Blend until smooth, occasionally scraping down the sides so everything is blended. You’ll notice bits and chunks of blueberry for quite some time, so just keep at it until everything is broken down and creamy without big chunks.

Serve immediately, topped with freshly-grated lemon zest and Loacker Lemon Wafers.

Option 2: Frozen Yogurt Wafer Sandwiches

Place the frozen blueberry yogurt into a piping bag with a regular round tip (for cake decorating: you can find sturdy ones that can be re-used.). These will get pretty chilly on your hands, so you may want to wear gloves if you are sensitive to cold. Keep the mixture frozen, because melted and liquid frozen yogurt will make the wafers soggy.

Squeeze some Lemon Blueberry Frozen Yogurt onto one of the Lemon Wafers.

Place another wafer on top to make a sandwich and freeze on a lined plate or pan for a few more minutes.

Serve frozen!

Option 3: Dipped Frozen Yogurt Wafer Sandwiches

Before serving the Frozen Yogurt Wafer Sandwiches you made above, add some extra sweetness and zing.

Melt some white chocolate chips.

Dip one end of the Frozen Yogurt Wafer Sandwich into the melted chocolate.

Before the chocolate hardens, sprinkle some fresh lemon zest on top.

Freeze a few more minutes on a plate or pan with wax paper, so the chocolate hardens. Serve frozen.

Lemon Blueberry Frozen Yogurt (with optional wafers)

Prep Time: 3 minutes
Total Time: 3 minutes

This creamy no-churn frozen yogurt is full of perfect duos: smooth frozen yogurt with crisp wafers, tangy lemon with sweet blueberry...these combinations will make your mouth water.

Ingredients

  • 1 teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 teaspoons granulated sugar
  • ¼ cup plain yogurt
  • 1½ cups frozen blueberries (kept frozen)
  • Fresh lemon zest
  • 4 Lemon wafers (for serving)
  • 2 Tbsps White chocolate, melted (optional)

Instructions

  1. In a food processor, combine the lemon juice, vanilla, sugar, yogurt, and blueberries.
  2. Blend until completely smooth, scraping down the sides occasionally so everything is well-blended.
  3. Top with fresh lemon zest.
  4. Serve immediately with a couple Lemon Wafers, or follow the notes for another way to serve.

Notes

Option 1: Place the frozen yogurt into a piping bag with a round tip and pipe onto a Lemon Wafer. Place another on top to make a sandwich and freeze for a few minutes before serving.

Option 2: Rather than serving immediately, remove the frozen yogurt sandwiches from the freezer and dip one end in melted white chocolate. While the chocolate is still creamy, sprinkle freshly grated lemon zest on top. Place on a lined plate or pan into the freezer for a few more minutes. Serve frozen.

These can remain frozen for some time before serving, however you may want to thaw a minute or two before eating if they become too hard.
