Melt-in-Your-Mouth Thumbprint Cookies Recipe

Serves: 16 cookies
These buttery cookies will simply melt in your mouth. They are simple to make and you can try different jams and sauces on the top.
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 stick of butter, at room temp
  • 1 cup Stonewall Kitchen pancake & waffle mix
  • ½ teaspoon baking powder
  • Jam/sauce (I used ¼ teaspoon Stonewall Kitchen Sea Salt Caramel Sauce on some and ½ teaspoon Stonewall Kitchen Wild Maine Blueberry Jam on some)
  • Pecans (optional)
  1. Preheat oven to 350ºF
  2. Mix all the wet ingredients (vanilla, egg, butter) until combined.
  3. Mix in the baking powder.
  4. Stir in the pancake mix until well-combined and a dough forms.
  5. If you can, refrigerate the dough for an hour. If you do not have time for this, you can use the dough right away and refrigerate the extras until needed.
  6. Line a baking sheet with parchment paper paper.
  7. Roll the dough into 1" balls and place them 2" apart on a baking sheet.
  8. Using your thumb, press down into the center of the balls of dough to create a well. The dough is a bit sticky, so dip your finger in a little extra of the pancake mix or some flour before creating the wells, if necessary.
  9. Spoon a little of the jam into the center of the cookies.
  10. Bake 12-14 minutes.
  11. When the cookies are finished baking, remove them from them the pan and onto a cooling rack.
  12. Makes 16 cookies.
