Black Bean and Corn Salsa Recipe

A nutritious and easy salsa recipe. Enjoy on tortilla chips, tacos, salads, or by itself.
Ingredients
  • 2 large tomatoes, diced
  • 1 green onion, chopped
  • ½ jalapeƱo, finely diced
  • 1 cup yellow and white corn (I used frozen corn, but canned works too)
  • 2 Tablespoons fresh cilantro, chopped
  • 2 Tablespoons green chilies
  • 1 cup black beans, rinsed
  • 1 Tablespoon white vinegar
Instructions
  1. In a medium bowl, combine all ingredients and stir.
  2. Cover and let sit in the refrigerator. I let mine sit overnight, but you can take it out sooner if needed. That's it. Two simple steps and it is delicious!
