A nutritious and easy salsa recipe. Enjoy on tortilla chips, tacos, salads, or by itself.
Ingredients
2 large tomatoes, diced
1 green onion, chopped
½ jalapeƱo, finely diced
1 cup yellow and white corn (I used frozen corn, but canned works too)
2 Tablespoons fresh cilantro, chopped
2 Tablespoons green chilies
1 cup black beans, rinsed
1 Tablespoon white vinegar
Instructions
In a medium bowl, combine all ingredients and stir.
Cover and let sit in the refrigerator. I let mine sit overnight, but you can take it out sooner if needed. That's it. Two simple steps and it is delicious!
