Baked Macaroni and Cheese with Cheesy Crumb Topping Recipe

My family absolutely loves macaroni and cheese, but my toddler tends to turn his nose up at anything homemade that does not have fun shapes and come from a box with a packet of cheese. He especially despises baked macaroni and cheese with crumb topping, but this…this Baked Macaroni and Cheese recipe with a cheesy crumb topping he just could not get enough of. That’s right, my toddler actually liked it! In fact, he had multiple bowls of it, so I just knew I had to share it with you.

The thing that makes this macaroni and cheese different is that it uses flavorful John Wm. Macy’s CheeseSticks and a delicious blend of cheeses. One great thing about using the CheeseSticks is that there are several flavor varieties you can choose from to switch things up a bit.

This macaroni and cheese is fairly easy to make and it does not take as long as some other baked macaroni and cheese recipes, which is especially important during the school year. We loved the texture of the crisp and crunchy topping.

Baked Macaroni and Cheese with Cheesy Crumb Topping

 

Begin by cooking the noodles. I cooked them just about what the instructions said on the packaging, cooking them just a minute or two less. When they are finished cooking, drain them and set aside.

In a large saucepan (I used the same one so I’d have fewer dishes to wash), melt the butter over medium heat.

Add in the cream cheese and milk and whisk until everything is melted and smooth.

Stir in the seasonings.

Slowly whisk in the shredded cheddar and mozzarella cheeses until smooth.

Whisk in the feta cheese and the parmesan cheese until combined and smooth.

Remove the pan from the heat and slowly fold in the macaroni until evenly coated, then transfer it into a casserole dish.

Crush the John Wm. Macy’s CheeseSticks into fairly-even crumbs. We did this as an activity for the kids, placing a storage baggie full of them on a cookie sheet and letting them pound it with a hammer (we finished it off so the pieces were about the same sizes), but you can also run it through a food processor.

Mix the CheeseStick crumbs with 2 tablespoons melted butter and sprinkle over the top of the macaroni and cheese until you have evenly covered the top.

Bake at at 350°F for 10-20 minutes until the top is crispy.

  • 1 16oz. package macaroni noodles
  • 10 Tablespoons butter
  • 2 cups milk
  • 4 oz. cream cheese
  • salt and pepper
  • ¼ teaspoon paprika
  • ¼ teaspoon turmeric
  • 1½ cups cheddar cheese (I used 1 cup medium ½ cup sharp), shredded
  • 1 cup mozzarella cheese, shredded
  • ¼ cup grated parmesan cheese
  • 1 Tablespoon feta cheese
  • 1 4.5oz. box John Wm. Macy's CheeseSticks, crushed
Instructions
  1. Preheat the oven to 350°F.
  2. Cook the noodles according to package instructions, pulling them out just a minute or two before the timer goes off. Drain and set aside.
  3. In a large saucepan, melt 8 tablespoons of butter over medium heat.
  4. Whisk in the milk and cream cheese until melted and smooth, then mix in the salt, pepper, paprika, and turmeric.
  5. Gradually stir in the shredded cheddar and mozzarella cheese until the mixture is melted and smooth, then whisk in the feta and parmesan until combined and smooth.
  6. Fold in the macaroni noodles until evenly coated, then transfer the mixture into a casserole dish.
  7. Coat the crushed CheeseSticks with 2 tablespoons melted butter and sprinkle evenly over the top of the macaroni and cheese.
  8. Bake 10-20 minutes until the topping is crisp and golden.

 

It’s important for me to stay fueled throughout the day, so I enjoy having some quick and tasty snacks available. John Wm. Macy’s CheeseSticks are such a delicious grab-and-go snack and they even come in savory or sweet varieties to fit my current needs. They’re like crackers with cheese, baked and without all the cutting and stacking.

Their CheeseCrisps are the perfect size for popping into your mouth. I tend to make them my bedtime snack. I love their flavor varieties. Sesame Gruyère is one of my favorites, but I’ve had a crush on the Cheddar Rosemary recently. It is so cheesy and has a slight kick to it; plus, I love that it incorporates an herb.

They have chocolate!

 

My kids loved the SweetSticks. We eat them as they are, but they also serve well with coffee. You could also try crushing some up and sprinkling it on yogurt or pudding. These are unique because they are actually made with cheese. They still taste sweet, but you get a hint of the cheese flavor. Think fondue.
