Melt-in-Your-Mouth Thumbprint Cookies Recipe

Melt in Your Mouth Thumbprint Cookies RecipeGuests are coming over. You want to impress them with a dessert that’s simple to make, but pleasing to the eyes and taste buds. Cookies…those always go over well. But wait; you’re out of flour. You won’t believe what you can use to make these melt-in-your-mouth thumbprint cookies!

While I was in NYC for the Summer Fancy Food Show, I was able to meet up with Stonewall Kitchen and even met the founders! They have so many products that are things my family uses all the time.

A pairing that stood out to me was the Stonewall Kitchen Farmhouse Pancake & Waffle Mix and their jams and spreads. As I always find myself doing, I decided to make a unique recipe with these items, so I made these thumbprint cookies. These cookies have a light buttery taste and simply melt away in your mouth. You can try different fillings for the cookies. I did half with the Stonewall Kitchen Wild Maine Blueberry Jam and half with Sea Salt Caramel Sauce and a pecan.

Ingredients

  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 stick of butter, at room temp
  • 1 cup Stonewall Kitchen pancake & waffle mix
  • 1/2 teaspoon baking powder
  • Jam/sauce (I used 1/4 teaspoon Stonewall Kitchen Sea Salt Caramel Sauce on some and 1/2 teaspoon Stonewall Kitchen Wild Maine Blueberry Jam on some)
  • Pecans (optional)

Directions

Preheat oven to 350ºF 1. Mix all the wet ingredients (vanilla, egg, butter) until combined. Melt in Your Mouth Thumbprint Cookies Step 12. Mix in the baking powder. Melt in Your Mouth Thumbprint Cookies Step 23. Stir in the pancake mix until well-combined and a dough forms.

4. If you can, refrigerate the dough for an hour. If you do not have time for this, you can use the dough right away and refrigerate the extras until needed.

5. Line a baking sheet with parchment paper paper.

6. Roll the dough into 1″ balls and place them 2″ apart on a baking sheet.

7. Using your thumb, press down into the center of the balls of dough to create a well. The dough is a bit sticky, so dip your finger in a little extra of the pancake mix or some flour before creating the wells, if necessary. Melt in Your Mouth Thumbprint Cookies Step 38. Spoon a little of the jam or sauce into the center of the cookies. Add a pecan on top (optional.) Melt in Your Mouth Thumbprint Cookies Step 49. Bake 12-14 minutes. 10. When the cookies are finished baking, remove them from the pan and onto a cooling rack.

These buttery cookies will simply melt in your mouth. They are simple to make and you can try different jams and sauces on the top.

I am definitely excited to try some of their other products, especially their Christmas gift sets.  Stonewall Kitchen ProductsWe received a few Stonewall Kitchen products to try at home. I am especially fond of the blueberry jam. The caramel sauce would also make a great ice cream topping!
