Salsa is one of my favorite snacks. I eat it all the time. Fresh salsa is the best and is actually very nutritious! I decided I would share my favorite salsa recipe with you to enjoy.
This recipe was already featured in my Fiesta Rice Boat Recipe, but I wanted to give you a quicker recipe form just for the salsa. It is super simple and there is no cooking involved!
What You Need
- 2 large tomatoes, diced
- 1 green onion, chopped
- 1/2 jalapeño, finely diced
- 1 cup yellow and white corn (I used frozen corn, but canned works too)
- 2 Tablespoons fresh cilantro, chopped
- 2 Tablespoons canned green chilies
- 1 cup black beans, rinsed
- 1 Tablespoon white vinegar
Directions
1. In a medium bowl, combine all ingredients and stir.Â
2. Cover and let sit in the refrigerator. I let mine sit overnight, but you can take it out sooner if needed. That’s it. Two simple steps and it is delicious!
Eat it with tortilla chips, on tacos or salads, or even by itself!

This is a very healthy and delicious and easy Salsa to make and have as a side dish or put on top of fish. I would love to make this for a Summer barbecue!
