Garden Fresh Pasta Salad with Suddenly Salad Recipe

Pasta is one of my favorite things to eat. Add in fresh veggies and, oh man. Deliciousness.

To celebrate the renewing and revitalizing of spring and summer months, I decided to make a simple and refreshing Garden Fresh Pasta Salad with okra and chickpeas. This dish is so simple to make, your little ones can help prepare it. Have them snap the beans, cut the olives with a butter knife, and stir it all together.

Suddenly Salad Pasta Classic

During summer months I like to eat meals that are a little lighter and not as heavy, but ones that still contain and help us fulfill our daily nutrition requirements. For this reason, I decided to include the pasta for grains, fruits and vegetables, and beans for protein.

Ingredients

  • 1 box Suddenly Salad Classic Pasta (including the sauce)
  • 1/2 cup okra, sliced
  • 1/2 cup green beans, cut into 1-inch pieces
  • 1/2 cup chickpeas, drained and rinsed
  • 1 cup cucumber, peeled and cut into quarters
  • 1/4 cup black olives, sliced in half longways
  • 3/4 cup grape tomatoes, sliced in half longways
  • 1 Tablespoon apple cider vinegar

Directions

1. Cook the pasta according to the instructions on the packaging.

2. Prepare the sauce from the box according to the package instructions.

3. As the noodles cook, prepare your vegetables and fruits so they are ready to mix in.

4. Once the pasta is finished cooking and you’ve rinsed with cool water and drained according to the instructions, toss the pasta in with the sauce.

5. Mix in the okra, green beans, chickpeas, cucumber, and olives.

6. Fold in the tomatoes. The reason I did these after is because tomatoes fall apart more easily so I wanted to make sure they stay in tact.

7. Gently stir in the apple cider vinegar.

8. Serve room temperature or chilled.
