Kale-Berry Salad

One of my favorite ways to enjoy kale is in massaged salad form. Massaging the kale allows the kale to break down and become sweeter rather than the bitter taste it typically has fresh and untouched. This Kale-Berry Salad recipe is great for parties or just enjoying at home with your favorite entree. It has a sweet and sour taste, is nutritious, and is fun to make.

Kale-Berry Salad is an easy recipe for kids to help make. They can learn about de-ribbing kale, the science of massaging kale, how to make vinaigrette, and more. Often when kids help make food, they are more apt to try it as well! My boys love to help make this easy salad recipe.

Ingredients

  • 1 bunch fresh kale, cleaned
  • 1/4 cup olive oil
  • 1-1/2 lemons, fresh
  • 2 teaspoons honey
  • Pinch of kosher salt
  • Dash of black pepper
  • 1/2 cup Newman’s Own Organics dried cranberries (more or less as desired)
  • 1/2 cup sesame sticks (more or less as desired)

Directions

1. Remove the kale leaf from the stems. This process is called “de-ribbing.” An easy way to do this is to grab both sides of the leaves at the base near the stem and pull down until the whole leaf comes off. Pile up your kale leaves and slice them into strands to make the salad.

2. Fresh kale by itself is rather bitter, so you will want to “massage” it until it gets softer. To do so, put a little olive oil and the juice from 1/2 a lemon in and a pinch of the kosher salt to wet the kale then do a massaging action until the kale is soft and a rich green color.

3. Now begin the dressing: in a bowl, whisk together the 1/4 cup of olive oil, honey, the rest of the lemon juice, and pepper until well-blended.

4. Toss the dressing with the kale. Serve chilled or room temperature. To serve, top with dried cranberries and sesame sticks.
