Southern Slow Cooker Pulled Pork Sandwiches and Slaw Recipe | Smithfield Marinated Pork

Southern Style Slow Cooker Pulled Pork Sandwiches

Last week I shared a recipe for Pork and Bean Soup with Kale with Smithfield Marinated Pork. My goal was to create something unique and different to show you a new and delicious way to eat pork. This week I wanted to hit up a classic dish and make it my own–Southern Slow Cooker Pulled Pork Sandwiches. 

You’ll be licking your fingers when you eat this tender and juicy pork sandwich. It has a tangy vinegar-based sauce with a hint of spice. The sweet and creamy crisp slaw brings this dish to a whole new level and the crispy bun brings it all together.  

I can still remember the first time I tried any form of a BBQ sandwich. I was in college and one of my friends decided to make some and invite me over. I am so glad she did because it is now one of my favorite meals to eat. Since I’ve been in the South, I’ve learned to love it topped with coleslaw and hot sauce. Yum! 

Since I am a busy parent and I know a lot of you are too, I wanted to make this meal very easy. Making this a slow cooker meal was an easy decision because you can prepare everything when you get a few extra minutes during nap time or school and have it done by dinner time.

Smithfield Marinated Pork Filet

Ingredients

Pulled Pork

  • 1 package (about 2 lbs) Smithfield Garlic and Herb Marinated Pork Filet
  • 1/2 cup zesty Italian dressing
  • 1/2 cup white soda
  • 2 Tablespoons apple cider vinegar
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon onion powder

Coleslaw

  • 1/2 cup mayonnaise
  • 1 Tablespoon brown sugar
  • 2 Tablespoons apple cider vinegar
  • 1 package (about 10 ounces) shredded cabbage

Sandwich

  • 8 rolls (I used kaiser rolls)
  • Red pepper sauce

Directions

1. In a slow cooker, combine the meat, dressing, soda, 2 Tablespoons vinegar, red pepper, and onion powder. Give it a little flip then place the lid on and cook on high about 4 hours (8 hours on low) or until the meat is tender and shreds apart easily.

2. While that’s cooking up, make the slaw. In a medium mixing bowl, whisk together the mayonnaise, brown sugar, and 2 Tablespoons of vinegar until smooth. Fold in the cabbage until everything is evenly coated. Refrigerate this for at least 1 hour (I left it in until the meat was finished cooking.)

3. Once the meat is finished cooking, shred it apart using a fork, tongs, or both.

4. Serve up the sandwiches! I used toasted rolls then layered on the pulled pork, coleslaw, and some hot pepper sauce to give it a little kick.

Bonus Tip: I made these sandwiches to not have much spiciness to them until you add the sauce. I did this as my little one was eating some of it. If you’re like me and you want a little extra kick, add more crushed red pepper flakes or even some cayenne pepper! ‘

    • Fun! Let me know how he likes it! He doesn’t have to have the bun toasted or you can pre-toast them, send some of the warm meat in a thermos, and a container of the coleslaw then either add some pepper sauce to the meat or send a bottle along and then they can easily put the sandwiches together!

    • 7Up should work, or something like Sprite (Sprite is what I usually use). They’re all pretty similar, so whatever is your favorite. It’s so yummy! 🙂
